Mr. Toi’s Semi Washed is simple in its processing approach, yet uncompromising when it comes to perfection. Staying true to his philosophy, Mr. Toi delivers a meticulously selected and flavorfully complex Fine Robusta.
In the semi-washed process, the fruit pulp of the coffee cherry is mechanically removed, while a small amount of sticky mucilage remains on the coffee seeds. These are then dried directly, which reduces water usage and enhances an intense yet clean flavor profile. The result is a coffee with balanced sweetness, medium body, and gentle fruitiness. This processing method is also known as pulped natural and is similar to a white honey.
Drying takes place in specially designed greenhouses equipped with fans to ensure even airflow and consistent drying. Over approximately 12 days, the beans are regularly moved until the coffee is ready for its final steps. In a dry mill, the parchment layer is removed, and the green coffee is sorted in two rounds—both mechanically and by hand—all in pursuit of a flawless bean appearance.
