Rume belongs to the product line of the ‘Incunables,’ which brings together Café Pacas’s most exclusive coffees. Rume, a truly special variety originating from South Sudan, is a remarkably sweet coffee characterized by fruity and floral notes, complemented by an elegant acidity. We selected the naturally processed version, and Maria gave it her sister Aida’s nickname: La Aya.

Rume is cultivated on two farms—La Esperanza and El Retiro—since these locations have proven to offer the ideal microclimate for this unique variety.

What makes the Incunables so special is that higher wages are paid during harvest and processing, serving as an incentive to maintain consistently top quality. This approach is reflected in the higher prices these coffees can command. For every worker, the difference in quality is truly felt, creating a shared commitment to excellence.
