“Rufina” is a bold Canephora raw coffee of the BRS2314 variety, masterfully produced by Kiva Estate in Toabré, Panamá. In the Anaerobic Slow Dried (ASD) process, the coffee is fermented anaerobically in water tanks for 10 days and then slowly dried under strict control. This sophisticated process gives the coffee extraordinary elegance and depth. Named after the legendary Panamanian revolutionary Rufina Alfaro, known for her beauty, diplomatic skill, and peaceful contribution to Panama’s independence, this coffee represents the peaceful Canephora revolution against the dominance of Arabica coffees. With an overwhelming and elegant taste experience, “Rufina” is an outstanding example of a coffee that confidently challenges the Arabica dominance in many areas of the coffee industry.
On the path to producing exceptional Canephora coffee, it is not only the flavor profile that must be perfected but also the careful selection of the coffee — an area that still presents structural challenges.
