Ngày Nắng #00068

Only on sunny days can the natural “Ngày Nắng” – Vietnamese for “sunny day” – be processed. In the shade of trees, the coffee cherries are slowly dried on raised beds at a stable humidity and thus develop their seductive aroma. This  coffee requires a lot of attention and a short reaction time. When dark clouds come in, the coffee is immediately covered to prevent the cherries from getting wet during a short rain shower. Mr. Quang Senior still takes care of many of the processes and is working closely with the farmers at Tamba.

 

1.      the cherries are picked by hand, floated, and sorted with an optical sorting machine.

2.      the cherries are then placed in fermentation tanks for 24 hours.

3.      they are then dried for up to 30 days. During this time, the cherries are moved regularly to ensure that the beans dry evenly.

4.      after the drying process, the cherries are separated from the coffee beans and visually sorted one last time and then stored in Grain Pro bags.
