Mùa Hè (Vietnamese for “Summer”) is an anaerobically processed natural coffee, produced by Zanya Coffee in Langbiang. This coffee shines with its liveliness and its pleasant wine-like fruity note. Its lactic and sweet character reminds us of whipped cream. A complex summer coffee.

The ethnic group of the K’Ho, whose small privately owned farms are located at the foot of Lang Biang Mountain, are resisting land investors and the emerging, competing flower industry that threatens their culture. Together with the K’Ho, we want to bring this special coffee to you and support the preservation of coffee cultivation in Lang Biang.

The cherries are hand-picked, separated from unripe cherries using a visual sorting machine, and then floated before being placed in airtight fermentation tanks for 80 hours. Here, they ferment in the absence of oxygen.

Afterwards, the cherries are spread out on drying beds and dried for about 30 days. They are moved several times a day to ensure even drying.

After drying, the cherries are separated from the beans using a so-called “hulling machine.”

Finally, defects are sorted out by hand and the green coffee is stored in Grain Pro bags until export.
