Peaberries are a natural mutation in which the coffee plant produces only one seed per cherry, packed with nutrients. Extra sweet, extra aromatic and extra delicious. Honey is characterized by its slightly fruity and nutty to chocolaty notes and is a hit in any espresso. Even as a filter coffee, this extremely cleanly produced coffee shines. Mr. Toi selects the Peaberries and makes its own product out of it, which we would very much like to share with you.
- The honey preparation begins with the de-pulping of cherries.
- All Peaberries are selected and separated from the other beans. (Peaberries are a natural mutation in 5-10% of each crop. For unknown reasons, some cherries develop only one coffee bean. These beans, because there is more space in the cherry, grow to a rounder shape and are packed with nutrients).
- The beans, without being fermented beforehand, are dried for ten days. During the drying process, the beans are moved regularly to ensure that they dry evenly.
- Finally, the coffee is sorted by hand one last time and packed in GrainPro bags.
