“Hatun Yacu” means “Big Water” in the Peruvian Quechua language. This name for the lot refers to our export partner “Finca Cascadas de Cueva” and the symbol of the waterfall. Many Peruvian villages on the eastern side of the Andes have “Yacu” hidden in their names. Here, hundreds of streams originate in the forest and on the fincas, all of which will later flow into the Amazon.
The “Hatun Yacu” lot is a blend of microlots of various varieties and processes from our partners Germán Carranza, Gover Cuevas, Martin Rojas, and Jorge Morocho from northern Peru. We have blended their lots to achieve optimal homogeneity in the bean appearance through an extra selection.
What makes the lot special is the screen size over 16. Thus, noble varieties such as Typica and Maragogipe are included in the lot, which produce a particularly fruity to tea-like flavor and give the cup a full, creamy body.
