The coffee Amyareth means “taste” in the Yanesha language and is grown on Gino Marin Ciriaco’s Finca Osopen in the Comunidad Nativa El Palomar. This finca is located at the foot of the Guapen mountain, which is often covered by fog, at an altitude of 1770 meters. The coffee comes from the Gesha variety and is processed using a washed method.
Gino Marin Ciriaco is the third generation of coffee producers in his family and took over the 16.5-hectare farm from his father Don Sadler in 2015. The finca is run in agroforestry, which leads to a more even ripening of the coffee cherries under shady conditions.
The Marins determine the degree of ripeness of the cherries based on the sugar content using a refractometer. First, the cherries are placed in water to remove any floaters floating on the surface. After a 12-hour resting period in plastic crates, the cherries are mechanically de-pulped.
The Amllareth Gesha Washed offers a rich flavour experience with notes of jasmine, citrus, pear and pome fruit jam. The short fermentation process specifically accentuates the flavor characteristics that define the Gesha variety. Fermented notes are in the background.
