Café Pacas is not just a brand name; it is family. A family that has been deeply rooted in coffee for generations. The coffees are more than products; they are an integral part of the family. The result of hard work and creativity, business, love and passion. Just as diamonds are something truly special, what makes Diamante unique is its composition—Rume, Kenya, Heirloom, Bernardina, and Gesha.
These varieties are among Café Pacas’ ‘Incunables’ – unique coffees of the highest quality and class. The coffees come from different farms owned by the Pacas family in the Apaneca Ilamatepec coffee region. Here, the volcanoes Santa Ana, Cerro Verde, and Izalco dominate, shaping the microclimate and soil.
As all picking cycles are separated, Cafe Pacas decided to create a blend from the first and last pickings. When combined, these extraordinary varieties, each with its own distinct cupping profile.
This blend contains not only well-known varieties, but also Bernardina. In 2012, the manager of a farm separated an unusual coffee plant that caught his attention due to the special flavor of its cherries. After genetic analyses, it was recognized as a new variety and named Bernardina, after its discoverer. In 2025, Café Pacas achieved success in two categories at the Cup of Excellence with this variety.
