Our partners at 96B in Saigon are not only a café and roastery — they are also actively involved in coffee production. According to recent findings, their coffee is a farm blend of Coffea liberica and Coffea dewevrei (Excelsa). These rare coffee species make up less than 1% of global coffee production and are extremely hard to come by. That’s why we’re especially pleased to have found partners in Vietnam who have built their expertise through years of meticulous work in cultivating and processing these exceptional coffee species.
The cherries for this White Honey lot undergo dry fermentation for 120 hours in airtight PE bags after picking. They are then thoroughly depulped, leaving approximately 25% mucilage on the seed. Afterward, the coffee is soaked in sealed containers with clean water for 48 hours before being spread out to dry for 30 days on shaded raised beds.
