When we visited the processing station in Đưng K’Nớ during the harvest season, we witnessed one of the most magical sunsets. The sky turned entirely purple. We had just brewed our last cup of the day after returning from the farm. A special moment that gave this very coffee its name “Hoàng Hôn” – sunset.
The five-day fermentation takes place in large stainless steel tanks. To ensure a completely oxygen-free environment, the tanks are infused with CO₂ supplied by a German craft brewery. After fermentation, the beans are dried on raised beds for up to 20 days. The result is a coffee with complex tropical fruit notes and a lingering sweetness.
