The country comprises six growing regions, each with defined flavor profiles and registered as protected designations of origin. Classic flavors include sweetness and complexity with notes of fruit, brown sugar, chocolate, and caramel. Coffee in El Salvador is grown under shade trees and harvested by hand.
Many producers focus on specialty coffee and use all processing methods creatively — washed, all forms of honey, natural, anaerobic variants, and combinations of everything — to achieve incomparable flavor profiles.
